This is my version of a very easy to make and tasty gluten free, high protein, high essential fat and low sugar banana bread. You can add more maple sugar or xylitol if you do want it sweeter, but I prefer as is. This is very filling and makes a great snack or even quick breakfast. Just toast and add some salted butter or nut butter for a high energy snack or leave as is for the whole family to enjoy. It also freezes well, so just portion, wrap, freeze and take out as and when needed.

Ingredients:

• 4 eggs
• 3 medium ripe bananas
• 1 tbsp maple syrup
• ¼ cup coconut milk or yoghurt (or other milk such as almond if preferred)
• 1 tbsp vanilla extract
• 2tsp baking powder
• 1 ¾ cup almond flour
• ¼ cup coconut flour
• 3tbsp cacao powder

Method:
1. Preheat oven to 180C
2. Grease a bread pan
3. In a large bowl, mash the bananas
4. Add lightly whisked eggs, maple syrup, coconut milk and vanilla essence to the bananas
5. In a separate bowl, combine the dry the ingredients
6. Combine both mixtures until well incorporated (Stir until combined, don’t over mix)
7. Bake for 50 minutes, or until a knife comes out clean
